The mixture is quite firm, so you may need to use your hands to combine. Use kitchen gloves when mixing the food colouring into the coconut mixture.

Ingredients
- 400g packet McVitie’s The Original Digestive biscuits
- 200g butter, melted
- 500g icing sugar mixture
- 240g (4 cups) desiccated coconut
- 395g can sweetene condensed milk
- 2 tsp vanilla extract
- Rose pink liquid food colouring, to tint
Method
- Step 1
Grease an 18cm x 28cm (base) slice pan. Line base and sides with baking paper, extending paper 2cm above long edges. - Step 2
Break up the biscuits and place in the bowl of a food processor. Process until the mixture resembles fine crumbs. Add the butter. Process until just combined. Press the mixture over the base of the prepared pan. Place in the fridge. - Step 3
Combine the icing sugar and coconut in a large bowl and make a well in the centre. Add the condensed milk and vanilla. Mix until well combined (see note). Press half of the coconut mixture over the prepared base. - Step 4
Add 2 to 3 drops of food colouring to the remaining coconut mixture. Mix well to combine, adding extra food colouring, if needed, to create a light pink colour. Press the pink coconut mixture over the top of the slice, using a warm spoon to make the top even. Place in the fridge for at least 4 hours or until set. - Step 5
Allow the slice to come to room temperature for 10 minutes before cutting. Cut into squares to serve.
