Easy Coconut Curry Sausages under $5 a serve

Ingredients​

  • 6 beef sausages
  • 6 potatoes chopped
  • 2 celery stalks diced
  • 2 carrots chopped
  • 1 onion chopped
  • 400 g canned diced tomatoes
  • 1 tbs crushed garlic
  • 2 tbs curry powder
  • 2 cups honebrand Chicken Liquid Stock
  • 375 ml coconut milk
  • 2 cups rice *to taste *to serve
  • 1 pinch salt and pepper *to taste

Method​



  1. Brown sausages in a pan, cutting in half in the pan, so they cook through.
  2. When sausages are almost cooked, add onions and celery, and cook until just soft

  3. Add carrots, potatoes, garlic and salt and pepper.
  4. Add curry powder and stir until fragrant.
  5. Add stock and tomatoes and mix well. Allow to simmer.
  6. Place mixture in an ovenproof dish and bake at 180°C or 160°C fan-forced for approximately 10 minutes.
  7. Add 1/2 the coconut milk and stir through. Cook for a further 5 minutes. Leave in a hot oven whilst making the rice.
  8. Place rice in a pot with the remaining coconut milk, cover with water and cook until rice is soft.
