Ingredients
- 6 beef sausages
- 6 potatoes chopped
- 2 celery stalks diced
- 2 carrots chopped
- 1 onion chopped
- 400 g canned diced tomatoes
- 1 tbs crushed garlic
- 2 tbs curry powder
- 2 cups honebrand Chicken Liquid Stock
- 375 ml coconut milk
- 2 cups rice *to taste *to serve
- 1 pinch salt and pepper *to taste
Method
- Brown sausages in a pan, cutting in half in the pan, so they cook through.
- When sausages are almost cooked, add onions and celery, and cook until just soft
- Add carrots, potatoes, garlic and salt and pepper.
- Add curry powder and stir until fragrant.
- Add stock and tomatoes and mix well. Allow to simmer.
- Place mixture in an ovenproof dish and bake at 180°C or 160°C fan-forced for approximately 10 minutes.
- Add 1/2 the coconut milk and stir through. Cook for a further 5 minutes. Leave in a hot oven whilst making the rice.
- Place rice in a pot with the remaining coconut milk, cover with water and cook until rice is soft.
