Easy Budget Tasty Chicken Soup

This is a family favourite.
For those who want a beautiful soup and are on a budget then this soup is definitely for you.
A big pot of chicken Soup is exactly what the body needs during our winter months. Its So nourishing, yet with just a few ingredients.

Ingredients
1 whole chicken ( boiler or normal)
Water to cover chicken in pot
2 cups medium grain rice
2 eggs plus one egg yolk
3-4 lemons
Salt and pepper
Method
1.Wash and clean chicken cavity and place into a large pot. Fill pot with water until it covers the chicken, add around 2 teaspoons of salt and bring it to the boil .
2. Reduce temperature and simmer for 2 hours .
3. Remove Pot from heat , and remove chicken from stock.
Place chicken onto a tray to cool slightly before pulling the flesh from the bone. Once you’ve removed all the flesh shred it into smaller pieces .
4. Add 1 cup of water to the pot and bring it back to the boil. Add the rice and simmer till rice is cooked .
5. In a bowl, beat the egg until they are foamy then Slowly add the the lemon juice as you continue to whisk.
6. Using a ladle spoon out 2 cups if the hot stock from the pot and gentle stream it into the egg n lemon whilst whisking Pour egg mixture into the stock while stirring it through the stock , add shredded chicken to the pot and black pepper
Serve with crusty bread , my no knead bread recipe is perfect and also a budget recipe
