Easy Basic Pancakes

An easy pancake recipe where you don’t rely on baking powder for fluffiness! In fact, you only need three staple ingredients to make these - and you probably have them in your fridge and pantry already.

Ingredients​

  • 1 cup self-raising flour
  • 1 cup milk
  • 1 egg

Method​

  1. Preheat a large, non-stick frypan.
  2. Place all the ingredients into a bowl and mix until just combined
  3. Lightly grease the pan with butter or cooking spray.
  4. Cook large spoonfuls of batter until bubbles burst on the surface and the edges start to go dry.
  5. Turn and cook other side until golden brown.

How many pancakes does this recipe make?​

I make six 12.5cm pancakes. This recipe also makes great pikelets.

What flavour pancakes can I make with this recipe?​

It works great with all the usual sweet toppings , butter and Maple Syrup. Blueberries , Nutella ect

Does this pancake recipe freeze well?​

They freeze and reheat in the microwave extremely well.

How thick should pancake batter be?​

The ideal consistency of pancake batter is pourable but thick enough to easily spread out in a hot pan. The exact thickness of the batter can vary depending on the recipe and personal preference. If the batter seems too thin or runny, you can add more flour, and if it's too thick, you can add more liquid such as milk or water, a little at a time until the desired consistency is achieved.

My mum's pancake mix was similar to yours.
1 cup of plain flour
1 cup of milk
1 pinch of salt
2 eggs.
This mixture was more like a crepe that you could roll up and eat with a knife and fork. It was suitable with sweet or savoury fillings. My favourite was lemon and sugar but I have made them with savoury mince or creamed corn. They are very versatile.

Lemon and sugar for me too.
I remember my mum making them like this when I was a kid.
 
Actually that’s a Jamie Oliver recipe in which he shows for different ways to use it😋
I got this recipe from Australia's best, I've also seen Jamie Oliver has the same recipe but uses skim milk. Also so many chefs use the same recipe.

The original one who published the exact recipe was Margaret Fulton , I think Jamie Oliver used hers.

If I go back further an old recipe book which is over 50 years old Aunt Marys cookbook also has the exact recipe with different ways.

Aren't we lucky to have so many great chefs who all think this one simple pancake recipe is so amazing

Believe it or not I have never made pancakes in my life 🙀I’ll give them a go later with Milo in them maybe.😋
