Easy Apple and Rhubarb Crumble

This always brings me back to my childhood.
Such an easy and delicious desert

If you don't like rhubarb then just add 3 more apples.

Serves 6 to 8
Prep time 20 minutes
Cooking time 30 minutes

Ingredients

 Filling

4 large apples , peeled and cut into chunks.

( I use any apples but some use only granny smith . I have even used a mixture )

1/4 cup water

1/2 bunch rhubarb stalks trimed and roughly chopped ( see hint )

1/3 cup caster sugar

Crumble

1/2 cup plain flour

90g chilled butter, chopped

1/2 cup brown sugar

1/4 cup coconut

1/4 cup rolled oats

1/2 teaspoon cinnamon ( can be left out)

Method

1. preheatoven 180 C or 160 C fan-forced . Lighty grease a medium oven proof dish.

2. place apples and water in saucepan over high heat and bring to boil. Reduce heat to medium low and simmer for 5 minutes with lid on until almost tender.

3. Add rhubarb and sugar to saucepan with apples and simmer further 5 minutes stirring occasionally, until rhubarb is just tender. Drain and discard any liquid..

4. Spoon mixture into prepared dish.

5. sift flourinto medium bowl, rub in butter using fingertips until mixture resembles fine bread crumbs. Scatter evenly over fruit.

6. Bake in oven for 30 minutes, until fruit bubbles and top is golden

Serve either warm or cold with icecream or by itself

HINT : DISCARD RHUBARB LEAVES IN BIN AS THESE ARE POISONOUS , leaves can actually be used in the garden as a repellent after being boiled in a pan you are not using for food
