Easy antipasto tarts

Looking for a delicious and easy dinner recipe that is packed with flavour? Try these delightful, easy antipasto tarts! These mouthwatering tarts are a perfect combination of flaky pastry crust, creamy cheeses, and an assortment of colourful and flavorful vegetables. The combination of sweet and tangy flavours makes these tarts satisfying and refreshing, perfect for a light dinner or a snack. It’s also a great way to get your daily dose of vegetables. So, let’s get cooking!

Ingredients:

-2 sheets of frozen puff pastry, just thawed

-250g ricotta

-290g Coles Deli Semi-Dried Tomatoes with Kalamata & Feta

-35g packet Gourmet Garden Salsa Verde Finishing Drizzle

-120g packet Coles Australian 4 Leaf Salad



Instructions:

1. Preheat your oven to 220°C and prepare two baking trays with baking paper. Take two sheets of pastry and place them on the lined trays. Starting from 1 edge, use a sharp knife to make 6 cm-long cuts at 1cm intervals in each sheet. Repeat on the opposite edge.

2. Spread a layer of ricotta cheese down the centre of each pastry sheet. Top the ricotta with the antipasto ingredients. Fold the strips, alternating, over the filling to enclose.

3. Bake for 20-25 mins or until golden brown and puffed. Cut each tart in half and place them on your serving plates.

4. Drizzle some salsa verde and serve with some fresh salad leaves. Enjoy!

Optional extras:

-Top with a sprinkle of chilli flakes for a spicy kick

-Add a few slices of prosciutto or salami for extra flavour

-Garnish with fresh basil leaves for a pop of colour

Whats the difference between Pasta and Anitpasto?
Are they opposite or similiar?
 
Antipasto isn‘t pasta. It’s a combination of foods such as sundried tomatoes, olives, artichoke hearts, garlic, soft cheeses like feta And cured meats like salami. Usually served as the first course of a meal or as a grazing platter.

Looks delicious, and just my sort of food. However, you can’t say that pastry is healthy. I guess it’s a sometimes food.
