Easy and Delicious Fishcakes

These were my Grandfathers favourite.
And must be an old Aussie favourite

Serves 4 Just double for more.

Great served with vegetables or salad even nice , sliced and added to a wrap.

Ingredients

3 to 4 potatoes mashed don't add anything to it

100 gram canned corn

2 tablespoon parsley chopped

1 x 210 gram can salmon I use pink and can be more or less give or take

2 eggs

3/4 cup bread crumbs

Oil to cook

Method

1. Mix mashed potato , corn, parsley and salmon in a bowl.

2. Use hands mix together and make 8 patties. Put on a plate / tray cover and put in fridge for at least 30 minutes

3. Beat egg in a bowl. Place breadcrumbs in a second bowl.

4. Dip each pattie in egg then into breadcrumbs until coated.

5. Heat oil in frypan over medium heat.

6. Fry each pattie for around 2 minutes on each side or until cooked through and golden.

Serve with salad or vegies of choice and lemon wedges .

Add anything you like to these to make yummy fritters, we used to use rabbit left over from baked rabbit dinners. Any leftover meats and or extra vegies are good also. Brings back fond memories of stretching the food budget to feed ten kids.

Been there I was one of 7 and I have 13 myself
 
Thank you all for your advice - I also think that maybe my mashed potatoes might be too wet - I will put all these tips to use :)
