Easiest Pork Dumplings

Who doesn't love a good pork dumpling? They're the perfect comfort food, whether you're eating them on their own or dipping them in a tasty sauce.
But if you're one of those people who have been buying your dumplings pre-made from the grocery store, we've got some news for you: you've been doing it all wrong! It's so easy to make your own dumplings at home, and they taste so much better when they're fresh.

Here are the ingredients you need:
1. 250g of pork mince
2. A cup of finely shredded ‘wombok’ (also known as Chinese cabbage)
3. One garlic clove, finely chopped
4. Two small pieces of ginger, one finely grated and the other cut into matchsticks
5. Two tablespoons of oyster sauce
6. Three spring onions, thinly sliced
7. 25 wonton wrappers
8. Three teaspoons of sesame oil
9. 185 millilitres of chicken stock
10. Two tablespoons of light soy sauce
11. Two tablespoons of rice wine vinegar
12. A teaspoon of chilli sauce (optional)
13. A teaspoon of caster sugar
Start by combining the mince, wombok, garlic, grated ginger, oyster sauce and two-thirds of the spring onion in a medium-sized bowl. Then, season the mixture with some salt and pepper. Prepare the wonton wrappers by placing them on a clean flat surface.
Scoop about half a teaspoon of the mince mixture and place it in the centre of each wrapper. Lightly dampen the edges and bring the corners together. Gently pinch each dumpling to seal.
Heat a teaspoon of cooking oil in a frying pan over high heat. Remove the pan from the heat and arrange half of the dumplings over the base. Leave them to cook over medium heat for about 2 minutes or until the bottom of the dumplings are golden brown. After that, pour over half of the chicken stock and cover.
Cook for 2 to 3 more minutes or until the dumplings are cooked through. Repeat the steps, making sure to add a teaspoon of oil for the remaining batch of dumplings and stock.
For the dipping sauce, combine the ginger matchsticks, soy sauce, vinegar, chilli sauce (optional), sugar, diced spring onions, and remaining oil in a small bowl. Serve with freshly cooked dumplings. Ta-da! How delicious does that sound?
