Sometimes, the simplest recipes in life are the best. Aglio e olio is one such example. In fact, it's so simple we almost can't call the following a 'recipe' with a straight face. The clue is in the name - in Italian, Aglio means 'garlic' and Oilio means 'oil', which are just about the ingredients you need to create this delicious dish.
Ingredients:
- 500 grams of spaghetti (any will do, but my preference is angel hair pasta)
- 1 head garlic
- 1/2 cup olive oil
- 1/4 teaspoon chilli flakes
- 1/4 cup parsley
- 1/4 cup Parmesan cheese
Instructions:
1. Peel and chop the garlic.
2. In a large pot, bring some water to a boil and cook the pasta according to the package instructions.
3. Drain the pasta, reserving a bit of the cooking water.
4. In the same pot, heat the olive oil over medium heat.
5. Add the garlic and chilli flakes and cook until the garlic is fragrant.
6. Add the pasta and the reserved cooking water and toss to coat.
7. Stir in the parsley and Parmesan cheese, add salt and pepper to taste and serve.
