Deliciously Simple: Aglio e Olio

Sometimes, the simplest recipes in life are the best. Aglio e olio is one such example. In fact, it's so simple we almost can't call the following a 'recipe' with a straight face. The clue is in the name - in Italian, Aglio means 'garlic' and Oilio means 'oil', which are just about the ingredients you need to create this delicious dish.



Ingredients:

- 500 grams of spaghetti (any will do, but my preference is angel hair pasta)
- 1 head garlic
- 1/2 cup olive oil
- 1/4 teaspoon chilli flakes
- 1/4 cup parsley
- 1/4 cup Parmesan cheese

Instructions:

1. Peel and chop the garlic.

2. In a large pot, bring some water to a boil and cook the pasta according to the package instructions.

3. Drain the pasta, reserving a bit of the cooking water.

4. In the same pot, heat the olive oil over medium heat.

5. Add the garlic and chilli flakes and cook until the garlic is fragrant.

6. Add the pasta and the reserved cooking water and toss to coat.

7. Stir in the parsley and Parmesan cheese, add salt and pepper to taste and serve.

The history of Spaghetti Aglio e Olio is a bit of a mystery, but it's thought to have originated in Southern Italy. This region is known for its simple yet flavourful cuisine, so it makes sense that a dish like this would come from there.

This dish has many variations, but the basic premise is always the same: spaghetti tossed in a garlic and olive oil sauce. Sometimes additional ingredients like anchovies, capers, or bacon are added for extra flavour.

Keep in mind that the quality of your ingredients will make a big difference in the final dish. Be sure to use a good quality olive oil and freshly grated Parmesan cheese if possible. These small details will take your spaghetti Aglio e Olio from good to great!
