Delicious Seafood Pasta Recipe

Seafood pasta is a popular dish from Italy that can be made with various types of seafood. The most common type used in this dish are prawns, lobster, and crab. Other seafood that can be used include scallops, squid, and mussels. The pasta is usually cooked in a tomato-based sauce, but white wine and cream sauces are also popular.

Ingredients:


-500 grams of pasta
-250 grams of seafood of your choice (you can use frozen seafood mix)
-1 tablespoon of olive oil
-1 onion, diced
-2 cloves of garlic, minced
-1/2 a teaspoon of crushed red pepper flakes
- 3 tablespoons tomato paste
-1/2 a cup of dry white wine
-1 can of diced tomatoes
-1/4 cup of chopped fresh parsley
-Salt and black pepper to taste
-1 tablespoon fresh lemon juice



Instructions:

1. Start by cooking the pasta in a large pot of boiling water according to the package directions.

2. While the pasta is cooking, heat the olive oil in a large enough pot over medium heat.

3. Add the onion, garlic, and red pepper flakes to the skillet and cook until the onion is soft about 5 minutes.

4. Add the tomato paste and cook, stirring occasionally, until slightly darkened in colour.

5. Add the white wine and cook until the smell of the alcohol is almost completely gone about 4 minutes.

6. Add the tomatoes, and turn the heat up to medium-high. Cook, stirring frequently, until the sauce thickens slightly, about 8–10 minutes. Season with salt to taste.

7. Add the seafood to the sauce and cook until it is opaque, or about 5 minutes.

8. Using tongs, pick out the seafood and transfer it to a large mixing bowl, discarding any mussels that have not opened. Cover loosely with foil to keep them warm.

9. Add the pasta and another ¼ cup of pasta cooking liquid to the sauce and stir until the sauce coats the pasta.

10. Remove from heat, return shrimp and mussels to the pot, and carefully toss to combine. Mix in the parsley and lemon juice.

11. Serve with a side of bread, and enjoy!

To make this dish extra special, you can add a pinch of saffron to the pasta for a touch of luxury. For a heartier dish, add some cooked sausage or chicken. You can also top with freshly grated Parmesan cheese before serving.
