Delicious and refreshing aperol punch

Aperol punch

Keep the drinks flowing with this delicious and refreshing Aperol punch

2/3 cup caster sugar

• 2 x 10cm strips orange rind

• 1 cup gin

• 2/3 cup lime juice

• 2 oranges, peeled, sliced crossways

• 3/4 cup Aperol aperitif

• 3 cups chilled soda water

• 4 cups crushed ice

• 1 cup fresh mint sprigs

• Lime slices, to serve

• Select all ingredients

• Place sugar, orange rind (2 x 10cm strips orange rind) and 1/2 cup water in a small saucepan over medium heat. Stir over heat until sugar dissolves. Bring to a simmer. Simmer for 2 minutes. Cool completely.

• Step 2

Place sugar mixture, gin, lime juice, orange slices, Aperol, soda water, ice, mint and extra lime slices in a large jug. Stir to combine. Serve.
