This is a great way to eat all those vegetables we should be having every day. And at around $2.20 a serve.
Recipe serves 8 which is easily halved but I say make the 8 Servings and freeze the unused serves . Just takeout from freezer the night before abd put in fridge. Then reheat in microwave or in a pot on stovetop

NOTES
You can use just about any combination of vegetables for this soup, but this one seems to work well.
Frozen beans can also be used. I often substitute the beans for frozen peas and/or corn depending on what I have around.
You can also add a can of drained red kidney beans if you want some more protein.

Ingredients
- 3 bacon rashers
- 2 onions
- 2 garlic cloves
- 2 carrots
- 2 potato
- 2 parsnips
- 1 cup pumpkin
- 2 zucchinis
- 2 tomato
- 1 cup fresh beans
- 4 cups Beef Style Liquid Stock
- 2 cups water
- 2 tbs oil
Method
- Dice the vegetables and bacon to approximately the same size.
- Heat two tablespoons of oil in a deep stockpot.
- Add the onion, bacon and crushed garlic and stir for two minutes.
- Add the carrot, potato, pumpkin and parsnip. Continue to stir for a few more minutes.
- Add the beef stock and simmer for 10 minutes.
- Add the zucchini, tomato, beans and water, and simmer until all vegetables are tender.
- Add more water if necessary
