Crustless Spinach Quiche

I love making quiche, it's such an easy and light meal

I make so many different quiches but this is mist if my family's favourite

Prep: 25 min. Bake: 40 min.

Ingredients​

  • 1 large onion chopped
  • 1 cup thinly sliced fresh mushrooms
  • 1 tablespoon oil
  • 300g frozen chopped spinach, thawed and well drained
  • 200g diced ham
  • 5 large eggs
  • 3 cups shredded Monterey Jack cheese or Mozzarella
  • 1/8 teaspoon pepper

Directions​

  1. In a large skillet / pan, saute onion and mushrooms in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake at 180°C / 160°C fan-forced ° for 40-45 minutes or until a knife inserted in center comes out clean.

Have to have a crack sounds nice,thanks for the heads up
