Crockpot Smothered Pork Chops

Ingredients:
- 6 bone-in pork loin chops (about 1.2 kg)
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 3/4 cup beef stock
- 1 can condensed cream of mushroom soup, undiluted (preferably a store brand)
- 1 can condensed cream of chicken soup, undiluted (preferably a store brand)
- 2 garlic cloves, minced
- 1/4 teaspoon paprika
- 1/4 teaspoon pepper
- 250 g sliced mushrooms
- 1 large onion, halved and thinly sliced
- 1 tablespoon cornflour
- 1 tablespoon cold water
- Season pork chops with salt on both sides. In a large frying pan, heat vegetable oil over medium heat. Brown pork chops in batches until golden. Transfer browned pork chops to a slow cooker.
- In the same frying pan, pour in beef stock, stirring to scrape up any browned bits. Whisk in cream of mushroom soup, cream of chicken soup, minced garlic, paprika, and pepper until smooth. Pour this mixture over the pork chops in the slow cooker. Top with sliced mushrooms and onions. Cover and cook on low for 5-7 hours, until the pork is tender.
- In a small bowl, mix cornflour and cold water until smooth. Gradually stir this mixture into the slow cooker. Return the lid and cook on high for an additional 30 minutes or until the sauce thickens slightly.
