Creamy Sun-Dried Tomato Pasta

This creamy sun-dried tomato pasta recipe is an easy and delicious meal that can be made in under 30 minutes. The sun-dried tomatoes add a lovely sweetness and depth of flavour to the dish, while the Parmesan cheese and fresh basil add a beautiful finishing touch. Ingredients:
200g sun-dried tomatoes in olive oil, drained
2 tablespoons olive oil from the sun-dried tomatoes
1/4 teaspoon paprika
2 cloves of garlic, minced
1 small onion, minced
1 cup (250ml) milk
1 cup (250ml) chicken or vegetable stock
¼ teaspoon Chilli flakes
1/2 teaspoon Italian seasoning
250g farfalle pasta
Parmesan cheese, freshly grated
Fresh chopped basil
Salt
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain the pasta, reserving some of the pasta water, and set it aside.
2. While the pasta is cooking, saute the minced garlic, onion, and sun-dried tomatoes in a large skillet with 2 tablespoons of oil from the sun-dried tomatoes jar. Sauté for 1 minute until fragrant. Sprinkle with a pinch of salt, paprika, Italian seasoning, and chilli flakes and cook on medium heat for 2 minutes more.
3. Add the milk and chicken or vegetable stock to the skillet and bring to a simmer. Add a bit of pasta water to thin the sauce if it’s too thick.
4. Once the sauce has simmered, remove it from heat. Stir in the cooked pasta and mix well. Adjust seasoning, sprinkle with basil and Parmesan cheese, and serve immediately. Enjoy!
