Coffee and Walnut Loaf Cake

This is a decadent coffee cake. I bake it when I have visitors.

150gr sugar
125gr butter
175gr S/R flour
1/2 teaspoon baking powder
2 eggs, lightly beaten
1 1/2 tablespoons instant coffee (dissolved/stirred into 2 tablespoons boiling water) *
20gr walnuts, chopped or crushed

Icing
200gr icing sugar
1/2 teaspoon instant coffee (dissolved/stirred into 1/2 tablespoon boiling water)
75gr butter, softened
extra walnuts for decorating

In a large bowl, mix together the butter and sugar.
Add the eggs, S/R flour, baking powder, coffee and walnuts. Mix until well combined.

Spoon mixture into a medium sized lined loaf tin.

Oven 170 degrees fan forced or 190 degrees for 40 minutes.

To make Icing:-
Mix together the icing sugar, butter and coffee until it forms a smooth consistency.
Spread on the loaf cake and decorate with chopped or crushed walnuts.

* You can use decaf coffee if you like.

My late mum's go-to if there was a family crisis was also a coffee walnut cake with butter icing. Sadly she took the recipe to the grave when she passed.
I remember one funny incident where, as her eyesight was failing, she mixed up icing sugar with bicarbonate of soda. With her friends gathered around at the kitchen table she served them all a slice and went to make the coffee. She wondered why they were eating slowly until she had a bite and almost choked on it. Thankfully they all saw the funny side.....
BTW I'll give this recipe a try and report back ☺️

Aaww your poor Mum. It would have been hard not to giggle. Hope you enjoy this cake though.

Hopefully it is the same as your mums, how goid would that be. What a funny story and a good nemory
