Coconut and Date Rolls

These delicious rolls are so easy to make and really hit the spot when you’re after
something sweet but healthy to eat. They are delicious as they are, but you can
add a tablespoon cocoa powder if you are in need of a chocolate fix.

Ingredients:
2 cups pitted dates
2 cups desiccated coconut
Extra desiccated coconut for rolling (optional)
Method:
• Place the dates and coconut into a food processor and process on high speed
for approx. 3–4 minutes until a thick paste forms, scraping down the sides as
needed to recombine.
• Form the mixture into approx. 12 rolls.
• Roll the rolls in the extra coconut if desired
• Store in an airtight container in the fridge. They will keep for at least two weeks,
