Classic No Bake Vanilla Cheesecake

This is a dessert that is perfect for any occasion. It is so easy and will truly impress your guests!

Ingredients
  • 250g packet plain sweet biscuits ( I use Arnott's Marie)
  • 150g butter, melted
  • 3 tsp powdered gelatine
  • 500g cream cheese, softened
  • 2/3 cup caster sugar
  • 2 tsp vanilla bean paste
  • 300ml thickened cream, whipped
  • Hulled and halved strawberries, to decorate
Method

  • Step 1: Grease a 20cm-round (base) springform pan. Using a food processor, process biscuits until fine crumbs. Add butter. Process until combined. Press the biscuit mixture over the base and side of the prepared pan. Refrigerate for 10 minutes.
  • Step 2: Meanwhile, place 1 1/2 tbsp water in a small microwave-safe bowl. Sprinkle with the gelatine and stir until combined. Microwave for 10 seconds (do not overheat). Use a fork to whisk until the gelatine dissolves.
  • Step 3: Meanwhile, using an electric mixer, beat cream cheese, sugar and vanilla until light and fluffy. Gradually beat in a gelatine mixture until combined. Fold in whipped cream. Pour the mixture into the prepared pan, levelling the top with a spatula. Cover. Refrigerate overnight or until set.
  • Step 4: Remove the cheesecake from the pan. Decorate the top of the cheesecake with strawberry halves. Serve.

This is a good base recipe. You could add so many variations like chocolate, nutella, mint flavouring and green colour, chopped cherry ripe etc. It can be also be a Lemon cheesecake, just omit the vanilla and substitute 1/4 cup of lemon juice.
I do use this as a base to many cheesecakes including making this exact recipe but decorating the top in many different ways including fresh fruit, on different berries or chocolate.
The choice is endless .
This recipe turns out every single time.
