1/2 cup sugar
1/3 cup butter, softened (80gr)
1/2 cup milk
2 eggs, lightly beaten

Put all the ingredients in a large bowl. Using an electric mixer, mix on high for 4 minutes.

Spoon into a medium sized loaf tin.

Oven 160 degrees fan forced, or 180 degrees

Cook for 40 to 45 minutes.

* I use Cadbury baking cocoa, plus I don't ice the cake .. just dust it with icing sugar.

If you have a tin of fruit like cherries, that could work, as the juice will help keep it moist

I even used apple puree in a pinch once but that will make it VERY dense

That's right. If you omit an ingredient, you usually need a replacement.

You can substitute the same ammount in banana or Greek yoghurt products any vegan butter
