Chocolate Banana Muffins

Chocolate Banana Muffins - Nigella

3 bananas - mashed measure of 1 1/3 cups
1/2 cup vegetable oil (I use sunflower)
2 large eggs
1/2 cup raw sugar
1 1/2 cups plain flour
3 tablespoons cocoa
1 teaspoon bi-carb soda

Peel and mash the bananas, then add the oil and mix well.
Add the eggs and sugar. Mix together.

In a separate bowl, sift the plain flour, cocoa and bi-carb then using a whisk - mix together.

Add this dry mixture to the banana mixture, and gently mix.

Makes 12 muffins.

Oven 200 degrees or 180 degrees fan forced for 15 - 20 minutes.
