Chocolate and Coconut Muffins

Recipe by Donna Hay.

Occasionally I want cake, so I make my own. I share these around.

I used a dark chocolate block on special, however, you could use dark chocolate chips if you prefer.

2 cups S/R flour
1 cup raw sugar (I used 1/2 cup)
1/2 cup desiccated coconut
1/4 cup cocoa powder, sifted
1 cup milk
1/2 cup oil
2 eggs, lightly beaten
2 teaspoons vanilla extract
200gr dark chocolate, chopped/broken into small pieces

Place the flour, sugar, coconut and cocoa in a large bowl. Using a whisk, mix to combine.
Add the milk, oil, eggs, vanilla and chocolate. Use a wooden spoon to mix, until just combined.
Spoon into muffin tin. It makes 12.

Oven 180 degrees fan forced or 200 degrees conventional.
Bake for 20 minutes. Test with a skewer if cooked.
Leave in muffin tin for 5 minutes until placing on a wire rack to cool.

They are nice and great to share. I've got her baking book, didn't get it from the internet, however I just saw there's a link which is handy.

I have 2 large hard cover books of hers and have never seen this recipe, so I'm very happy that you shared it and know many others will be as well 🥰

What are you going on about. I said I stock up on blocks of chocolate when they are 1/2 price . So please explain your comment
You are 'led to believe' that you are paying half-price whereas in fact the product has been 'marked up' to mark down. The advertised price is the 'REAL' price..... I was in retail for over 40 years so I know the tricks of the trade.....

Okay but when you go to buy the block of chocolate the week after it's on sale then it's double the price
 
I'm bumping this recipe up.
Three of my daughters have now made these including a non cook and that ones hubby was very surprised 😮

The three of them said they were so easy and just like you would buy in a Cafe.

Hopefully more genuine home cooks will post their incredible recipes.
