Chocolate and Coconut Muffins

Recipe by Donna Hay.
Occasionally I want cake, so I make my own. I share these around.
I used a dark chocolate block on special, however, you could use dark chocolate chips if you prefer.
2 cups S/R flour
1 cup raw sugar (I used 1/2 cup)
1/2 cup desiccated coconut
1/4 cup cocoa powder, sifted
1 cup milk
1/2 cup oil
2 eggs, lightly beaten
2 teaspoons vanilla extract
200gr dark chocolate, chopped/broken into small pieces
Place the flour, sugar, coconut and cocoa in a large bowl. Using a whisk, mix to combine.
Add the milk, oil, eggs, vanilla and chocolate. Use a wooden spoon to mix, until just combined.
Spoon into muffin tin. It makes 12.
Oven 180 degrees fan forced or 200 degrees conventional.
Bake for 20 minutes. Test with a skewer if cooked.
Leave in muffin tin for 5 minutes until placing on a wire rack to cool.
