Chickpea, marinated vegetable and feta salad

Tired of the same old boring salads that leave you feeling unsatisfied? It's time to shake things up with this delicious and nutritious Chickpea, Marinated Vegetable and Feta Salad! Packed with various fresh vegetables, protein-rich chickpeas, and tangy feta cheese, this salad is bursting with flavour and texture. It's perfect for a light lunch, a quick dinner, or even a party appetiser. Plus, it's easy to make and can be customised to your liking with your favourite vegetables and herbs. And in just 20 minutes, you'll have a delicious salad that will leave you feeling satisfied!

Ingredients:

2 x 400g cans chickpeas, rinsed, drained

2 cups roughly chopped mixed marinated chargrilled vegetables

1 1/2 tbsp red wine vinegar

1/4 cup (60ml) olive oil

Salt and cracked black pepper

120g baby spinach leaves

125g Greek feta, roughly crumbled



Instructions:


1. In a large bowl, combine chickpeas and chargrilled vegetables.

2. Make the dressing by whisking together red wine vinegar, olive oil, salt, and pepper in a small bowl until well combined.

3. Pour the dressing over the chickpea mixture and toss to coat evenly.

4. Arrange baby spinach leaves on a serving platter and spoon over the chickpea mixture.

5. Top with the feta cheese and serve immediately.



To make this dish extra special, you can add some freshly chopped herbs such as parsley, mint, or oregano. You can also add some freshly squeezed lemon juice or a few drops of balsamic vinegar for a burst of flavour. Lastly, you can top the salad with some toasted nuts or seeds for a crunchy finish. Enjoy!

Easy line a tray with baking paper add chosen vegies and drizzle with olive oil bake in oven until cooked and just brown , usually 20 minutes in moderate oven.

Onion ..cut into wedges
Beans
Sweet potato

Vegies like potato or carrots really don't work
