Chickpea, marinated vegetable and feta salad

Ingredients:
2 x 400g cans chickpeas, rinsed, drained
2 cups roughly chopped mixed marinated chargrilled vegetables
1 1/2 tbsp red wine vinegar
1/4 cup (60ml) olive oil
Salt and cracked black pepper
120g baby spinach leaves
125g Greek feta, roughly crumbled
Instructions:
1. In a large bowl, combine chickpeas and chargrilled vegetables.
2. Make the dressing by whisking together red wine vinegar, olive oil, salt, and pepper in a small bowl until well combined.
3. Pour the dressing over the chickpea mixture and toss to coat evenly.
4. Arrange baby spinach leaves on a serving platter and spoon over the chickpea mixture.
5. Top with the feta cheese and serve immediately.
To make this dish extra special, you can add some freshly chopped herbs such as parsley, mint, or oregano. You can also add some freshly squeezed lemon juice or a few drops of balsamic vinegar for a burst of flavour. Lastly, you can top the salad with some toasted nuts or seeds for a crunchy finish. Enjoy!
