This is another recipe I make for hubby who has diabetes
I'm not a dietician it's just through my research that I found these recipes

Ingredients
- 1 medium can of light tuna in water
- 1/4 cup finely chopped celery
- 2 shallots chopped
- 1/4 cup sliced water chestnuts, chopped optional
- 1 small chopped red capsicum
- 2 tablespoons reduced-fat mayonnaise
- 2 teaspoons mustard I use dijonaise
- 2 spinach tortillas (8 inches), room temperature also ok is the spinach n herb one. These are available at most supermarkets in the bread section
- 1 cup shredded lettuce

Directions
- In a small bowl, mix the first 7 ingredients until blended. Spread over tortillas; sprinkle with lettuce. Roll up tightly .
