Chicken & Chorizo Jambalaya

Jambalaya is a hearty dish that originates from Louisiana in the United States. It is traditionally made with rice, vegetables, and meat or seafood. The most common meats used in jambalaya are sausage, chicken, and prawn. In this jambalaya, the chicken provides a hearty and filling base that is packed with protein. It also absorbs the flavours of the other ingredients, making for a delicious and well-rounded dish.

Moreover, the cajun seasoning is a perfect addition to this dish because it gives it a spicy, flavorful kick. The Cajun seasoning, combined with the thyme and chicken stock, creates a rich and savoury sauce that is perfect for coating the rice and chicken.



Ingredients:

-500g chicken breasts, cut into bite-sized pieces
-250g chorizo, sliced
-2 green capsicums, diced
-1/2 red onion, diced
-2 cloves garlic, minced
-1 cup long-grain rice
-1 1/2 cups chicken stock
-2 tablespoons olive oil
-1 teaspoon dried thyme
-1 teaspoon cajun seasoning
-1/2 teaspoon salt
-1/4 teaspoon black pepper

Instructions:

1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken, chorizo, capsicums, onion, and garlic. Cook until the chicken is browned and the vegetables are softened about 8 minutes.

2. Add the rice, chicken stock, thyme, cajun seasoning, salt, and black pepper. Stir to combine.

3. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.

4. Remove the pot from the heat and let it sit for 5 minutes to absorb the flavours.

5. Serve hot, topped with green onions and diced tomatoes, if desired.

To make the dish extra special, you could add a cup of frozen peas or diced tomatoes during the last 5 minutes of cooking. You could also top each serving with a dollop of sour cream or shredded cheese.

This chicken and chorizo jambalaya is a quick and easy way to enjoy a delicious and hearty meal. With just a few simple ingredients, you can have a tasty dish that is full of flavour in under an hour.
