Cheesy bacon, broccoli and cauliflower

There’s nothing quite like the classic comfort food to make you feel cosy and warm inside. And this cheesy bacon, broccoli and cauliflower is definitely one of those dishes! The delicious combination is smothered in cheese and then baked to perfection. It’s easy to make and is guaranteed to have you eating your vegetables!
Ingredients:
400g cauliflower, cut into small florets
400g broccoli, cut into small florets
125g middle bacon rashers, coarsely chopped
2 x 180g tubs Black Swan Warming Cheesy Garlic and Herb dip
1/2 cup (60g) shredded tasty cheddar
Instructions:
1. Bring a large pot of water to a boil and add cauliflower florets. Cook for 8 minutes or until tender. Add broccoli florets for the last 3 minutes of cooking. Drain and set aside.
2. Preheat oven to 200°C. In a frying pan over medium heat, cook bacon until golden. Remove with a slotted spoon and set aside.
3. In the same pan, add the cooked cauliflower and broccoli and stir until heated through.
4. Transfer the mixture to a baking dish, top with shredded cheddar cheese, and bake for 10 minutes or until the cheese is melted and the mixture is heated through. Serve.
Optional ways to make this dish extra special:
- Add a sprinkle of breadcrumbs on top before baking to create a crunchy topping.
- Add some diced shallots and garlic to the bacon before cooking.
- Use a mix of different cheeses for more flavour.
- Drizzle some cream over the top before baking for a richer flavour.
