Charred oyster sauce prawns with rice noodles

If you're like me, who loves anything with prawns, you'll absolutely love Charred Oyster Sauce Prawns with Rice Noodles. The combination of the flavourful oyster sauce, crunchy prawns and soft noodles is a winner every time, perfect for a regular weeknight dinner. Ingredients:
1/3 cup (80ml) oyster sauce
2 tsp sesame oil
1 tbsp fish sauce
Juice of 1 lime
10 large green prawns, peeled (tails intact), deveined
2 tbsp olive oil
100g flat rice noodles
1 bunch choy sum, blanched
Small red chilli, sliced, to serve
Roasted peanuts, chopped, to serve
Instructions:
1. Mix oyster sauce, sesame oil, fish sauce, and lime juice in a bowl. Coat the prawns with half of the sauce in a separate bowl.
2. Heat some olive oil in a large frypan over high heat and cook the prawns for about 4 minutes, turning them over until they become charred and are cooked through.
3. Soften the noodles by soaking them in boiling water for 1 minute, then drain.
4. Divide the noodles, prawns, and choy sum among bowls, and drizzle them with the remaining sauce.
5. Serve with chilli and peanuts. Enjoy!
To make this dish extra special, you can add some fried garlic and shallots to the dish to give it an extra crunch and flavour. You can also substitute the prawns with other seafood, such as squid or scallops. Lastly, you can top the dish with freshly chopped coriander leaves for a pop of freshness. Enjoy!
