Cauliflower patties - Recipe

Synonymous with winter, cauliflower appears in Italian kitchens in various forms. Combined with Parmigiano, potatoes and herbs, cauliflower patties are a simple vegetarian dish to add to your winter repertoire.​

List of Ingredients​


  • 1 LB 8 OZ. of cleaned cauliflower florets
  • 9 OZ. of potatoes
  • 3 OZ. of Parmigiano Reggiano PDO, grated
  • 3 of eggs
  • breadcrumbs
  • peanut oil
  • thyme
  • salt
  • pepper

Method​

Wash the potatoes and boil with skin on. When cooked, peel them and mash them with a potato ricer while still hot.

Bring water to a boil in a large pot. Add the cauliflower florets and boil for 15-20 minutes, so that they remain crunchy. Line a baking tray with paper towels. Drain the cauliflower and let cool on the paper towels. Chop the florets in a blender with the leaves of 2 thyme sprigs and add to the mashed potatoes.

Beat 1 egg lightly with the Parmigiano, salt and pepper and add to the mashed potato mixture. Mix until incorporated.

Form the meatballs by working the mixture with your hands: if they are too soft, add a few Tbsp. bread crumbs.

Beat 2 eggs in a bowl and place breadcrumbs in a plate. Dip the cauliflower balls in the eggs, then in the breadcrumbs.

Bring oil to 350°F in a frying pan and fry until golden brown. Alternatively, place them on a baking tray lined with parchment paper and bake at 175-180^ celcius for around 15 minutes.
