125gr plain flour
1 teaspoon baking powder
1 egg
150ml milk
2 tablespoons sugar
1/2 teaspoon cinnamon
1 carrot, grated

In a large bowl, using a whisk - mix all ingredients together. Whisk until it becomes a smooth mixture.

* I use 1/4 cup mixture. It makes 8 pancakes.

Nice with yoghurt and maple syrup.

Love pancakes , I make your lemon pancake recipe with yoghurt every 2nd Sunday for breakfast and they really fill you up for a long time . Have to try this one with carrots . I bake mine in a non stick frypan and always come out clean . Thank you for sharing!
