Carrot Bread

This is not carrot cake It's a bread , not crumbly like cake.
Also delicious toasted.

Ingredients
- 1/2 cup sugar
- 1 cup plain flour
- 1/2 cup wholemeal flour
- 1 teaspoon baking powder
- 1 teaspoon bi carb soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs, room temperature
- 3/4 cup unsweetened applesauce (available at coles n woolworths)
- 1 teaspoon vanilla extract
- 1 cup shredded carrot
- 1/4 cup chopped walnuts
Directions
- Preheat oven to 175C or 155 fan-forced. Grease and flour an 8x4-in. loaf pan.
- In a bowl, combine sugar, flours, baking powder, bi carb soda, salt and cinnamon.
- In another bowl, combine eggs, applesauce and vanilla; stir into dry ingredients until just moistened. Fold in carrots and walnuts. Pour into prepared pan.
- Bake until a toothpick comes out clean, 50-55 minutes. Cool 10 minutes before removing from pan to a wire rack.
