Carrot Bread

This is not carrot cake It's a bread , not crumbly like cake.
Also delicious toasted.

Ingredients​

  • 1/2 cup sugar
  • 1 cup plain flour
  • 1/2 cup wholemeal flour
  • 1 teaspoon baking powder
  • 1 teaspoon bi carb soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, room temperature
  • 3/4 cup unsweetened applesauce (available at coles n woolworths)
  • 1 teaspoon vanilla extract
  • 1 cup shredded carrot
  • 1/4 cup chopped walnuts

Directions​

  1. Preheat oven to 175C or 155 fan-forced. Grease and flour an 8x4-in. loaf pan.
  2. In a bowl, combine sugar, flours, baking powder, bi carb soda, salt and cinnamon.
  3. In another bowl, combine eggs, applesauce and vanilla; stir into dry ingredients until just moistened. Fold in carrots and walnuts. Pour into prepared pan.
  4. Bake until a toothpick comes out clean, 50-55 minutes. Cool 10 minutes before removing from pan to a wire rack.
