Caramelised pear, rum and coconut crumble is a sweet and decadent dessert that is sure to impress. The pears are caramelised and slightly tart, while the rum and coconut give it a sweet and tropical flavour. The crumble topping is crispy and crunchy, making it a perfect contrast to the soft fruit.
Ingredients
2 lemons, juiced
1 tbsp cornflour
6 ripe pears, peeled, halved and cored
100g light brown soft sugar
3 tbsp spiced rum
30g unsalted butter
For the topping
120g plain flour
80g cold unsalted butter, cut into cubes
40g light brown soft sugar
30g desiccated coconut
40g shaved coconut
40g almonds, roughly chopped
½ tsp ground cinnamon
clotted cream to serve
Instructions:
1. Preheat the oven to 200 degrees Celsius
2. Mix the lemon juice and cornflour in a bowl. Tip this into a medium ovenproof dish. Add the pears, sugar and rum.
3. Dot over the butter and bake for 20-25 mins until the pears are soft, tossing halfway through.
4. For the topping, mix the flour, butter, sugar, coconut, almonds and cinnamon, and ½ tsp sea salt flakes in a bowl. Rub together with your fingers until the mixture resembles breadcrumbs.
5. Spread the mixture over a baking tray and bake in the oven for 10-15 minutes until golden and crunchy.
6. Sprinkle the crumble over the caramelised pears, then bake for a further 10-15 minutes.
7. Serve with cream, and enjoy!
How to make it extra special:
1. For an extra crispy topping, try adding some chopped nuts or additional oats.
2. For a more decadent dish, try drizzling the crumble with melted chocolate or caramel sauce.
3. Serve the crumble with a scoop of ice cream or vegan whipped cream.
