This is the perfect dish for Mother's Day Brunch and very easy to make, so fellas if your wife/partner likes omelettes and likes mushrooms then she will love this

Ingredients
- 400g sliced fresh mushrooms
- 1 medium red/ purple onion, chopped
- 3 tablespoons butter
- 3 tablespoons olive oil
- 1 shallot, chopped
- 1 garlic clove, minced
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded Parmesan cheese
- 8 large eggs
- 3 tablespoons thickened cream
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In a 25cm ( or close enough) ovenproof frypan saute mushrooms and onion in butter and oil until softened. Reduce heat to low; cook for 20 minutes or until deep golden brown, stirring occasionally. Add shallot and garlic; cook 1 minute longer.
- Sprinkle with cheeses. In a large bowl, whisk the eggs, cream, salt and pepper; pour over top. Still on low temperature Cover and cook for 5 to 7 minutes or until eggs are set.
- Turn of heat ,remove lid and Let stand for a few minutes. Cut into 4 wedges.
