Campbell’s releases new range of wellness soups that are perfect for the cold weather! — here’s everything you need to know

What better way to cope with the colder weather other than tucking yourself in a sweater and enjoying some nice warm comfort food, right?



Well, for those of us looking to indulge in some delicious yet healthy meals that are perfect for the cooler weather, we've got good news for you!

Just in time for winter, Campbell's has released a new range of healthy soups that will surely satisfy your comfort food cravings.

While it can't be denied that some of us have a tendency to go into ‘hibernation-mode’ during the cooler months due to the comfort that the low temperature brings us — which subsequently leads to us getting less productive — Campbell's new ready-to-eat Wellness Soups allows consumers to enjoy hearty soups without the need for manually preparing them from scratch.

So, what are the new flavours included in the range?

The food processing company introduces four new tastes to its collection:

1. Pumpkin with Turmeric

Pumpkins are a good source of vitamin A which strengthens and supports the immune system. Also, turmeric is known for its antibacterial properties and ability to reduce inflammation.

2. Tomato & Basil with Lentils

This delicious soup contains good carbohydrates that can help energise you on those cold autumn mornings.

Additionally, tomato is known for its rich lycopene content — an antioxidant that helps fight cancer.



3. Green Pea with Spinach

The soup contains 11 grams of protein per serving, making it ideal for those who are looking to build muscle mass or are in need of support for muscle strength.

4. Sweet Potato & Carrot with Coconut

For those who are having trouble with their digestion, this soup is perfect for you!

Sweet potatoes are known for their high fibre content which can aid people who are suffering from digestive issues.

Creamy Roaster Cauliflower Soup

Ingredients:
  • 1 Large Head Cauliflower (about 2 pounds), cut into bite-size florets
  • 3 tbsp Olive Oil, divided
  • 1 medium Onion, chopped
  • 3 Cloves Garlic, minced
  • 4 cups (32 ounces) Vegetable Broth
  • 1 cup Milk
  • 2 tbsp Unsalted Butter
  • Salt
  • Paprika
  • Parsley

Method:
  1. Cut the cauliflower and place the florets on a baking sheet lined with parchment paper. Toss them with 2 tablespoons of olive oil and season with salt and paprika on top. Bake it at 180°C for 25 to 35 minutes or until the cauliflower is tender and caramelized on the edges.
  2. Chop onion and mince the cloves of garlic. In a medium saucepan, warm the remaining 1 tablespoon of olive oil and add the onion and the garlic. Cook until they are softened.
  3. Add the vegetable broth. Remove the cauliflower from the oven and add it to the saucepan. Reserve 2 or 3 of the prettiest roasted cauliflower florets for garnish. Let the mixture simmer for about 20 minutes.
  4. Once done, transfer the mixture to a larger pan, and blend until creamy. Add the milk and continue blending until well incorporated. Place the pan back on the heat, stir a little bit and add the butter. Stir continuously for 2 minutes and then blend again to make it creamier.
  5. Transfer the cauliflower soup to a bowl and garnish it with 2 or 3 cauliflower florets. Sprinkle some paprika on top for extra flavour and add some fresh parsley leaves.

Just check the ingredients list, what is marketed as ‘healthy’ often contains a whole list of additives…not so healthy then!
 
In my case when cooking for a wife who is allergic to Aliums, a can of soup would make a very welcome start to a winter meal, or a lunchtime snack. Unfortunately no current soups of any brand come onion or garlic free, and i'd be willing to bet these new flavours are no different. "Wellness Soups" could they be sued for false advertising???

I always look forward to winter to make big batches of vegetable or pumpkin soup. All the vegetables go in to my vegetable soup and pumpkin, sweet potato and potato go into the other. Goes into the deep freeze for a number of meals.
