Butterscotch Date Biscuits

Ingredients:

Biscuits
125 grams softened butter
2 cups soft brown sugar, firmly packed
2 eggs, beaten
1 teaspoon vanilla extract
3 1/2 cups plain flour
1/2 teaspoon salt
1 teaspoon bicarbonate of soda
1 teaspoon baking powder

• Filling:

500 grams dates, chopped
1/2 cup soft brown sugar
1/2 cup water
1/2 cup blanched almonds, chopped


Instructions:


1. Using an electric mixer, beat the butter and sugar until light and fluffy.

2. Add eggs and vanilla, and beat well.

3. Sift together all dry ingredients, then add to creamed mixture, and stir until thoroughly combined.

4. Roll the dough into a log about 4 cm in diameter, wrap in foil, and refrigerate for several hours, until cold.

5. Preheat oven to 180 deg C. Lightly grease baking trays.

6. For the filling, heat dates, sugar, and water in a saucepan until thickened. Stir in nuts.

7. Cut the log into slices. Place half the slices on greased baking trays. Top each with a dollop of the date filling, and place a second slice of dough on top. Press edges together with a fork to seal.

8. Bake for about 10 minutes, or until lightly browned.

Makes 60.
