Budget Meatball Chowmein

I want to Add a few easy budget recipes that I have cooked and my family love.

Cooking time : 20 min prep and 20 min cooking
Serves 4

Ingredients:

  • 500g lean beef mince

  • 1 carrot, peeled, finely grated

  • 25g (1 ⁄2 cup) panko breadcrumbs , available in Coles or Woolies next to normal breadcrumbs

  • 1 garlic cloves, crushed or 1 teaspoon of jar garlic

  • 2 tsp finely grated fresh ginger (optional)

  • 1 egg

  • 80ml (1 ⁄3 cup) soy sauce

  • 1 tbsp vegetable oil

  • 280g packet dried chow mein noodles

  • 70g (1 ⁄3 cup, firmly packed) brown sugar

  • 80ml (1 ⁄3 cup) hoisin sauce

  • 250g broccoli, cut into florets
  • 2 extra carrots , cut julienne
Method :

Step 1
Place the beef, carrot, breadcrumbs, garlic, ginger, egg and 1 tbsp soy sauce in a bowl. Use clean hands to mix until well combined. Shape tablespoonfuls of the mixture into balls to make 24 in total.

Step 2
Heat the oil in a large non-stick frying pan over medium heat. Cook meatballs, turning occasionally, for 5 minutes or until well browned. Cook the noodles following packet directions.

Step 3
Whisk together the sugar, hoisin, remaining soy sauce and 60ml (1 ⁄4 cup) water in a jug. Add to frying pan. Reduce heat to low. Cover and simmer for 5 minutes. Top with broccoli and extra carrots Cook, covered, for 5 minutes or until broccoli and carrots are just tender. Uncover. Simmer for 2 minutes or until thickened. Divide the noodles and meatball mixture among serving plates.

That looks delicious Suzanne rose. I’ve copied and pasted it to notes on my iPad & will try it soon. Thank you.

Fellow readers just a tip from me - don’t buy Coles Beef & Pork meatballs. They are so full of what is probably ‘filler’ (didn’t seem like any beef & pork mince in it, by any stretch of the imagination) that when you gently cook them as recommended by frying they come out like ‘bullets’, so very hard and compact that I actually had to chop them up in my processor to be able to eat them with a Tuscan Meatballs packet base which had a full tin of diced tomatoes and to make it palatable also added some yoghurt.

I have never cooked pre made ones. Meatballs are so easy to make and I need to know what's in them . I have previously added other great meatball recipe's

Thank you Suzanne rose - I don’t normally buy ready prepared from supermarkets but this was a hurried purchase. Never again! I would normally make my own with spices, egg, breadcrumbs etc but needed some in a hurry.

We made our meatballs from scratch, the meal was okay, but my husbands a big eater, so serves 4, not at our place. I think also we will fatten it out with extra vegies and noodles.
