Ingredients
1 pound bucatini pasta
4 ounces pancetta or bacon diced
4 large eggs
1 cup grated Pecorino Romano cheese
1/2 cup grated Parmesan cheese
Freshly ground black pepper to taste
Salt for pasta water
Instructions
Bring a large pot of salted water to a boil. Cook bucatini according to package instructions until al dente.
While pasta cooks, fry pancetta in a skillet until crispy. Remove from heat and set aside.
In a mixing bowl, whisk together eggs, Pecorino Romano, Parmesan, and a generous amount of black pepper.
Drain pasta, reserving 1 cup of pasta water. Immediately add hot pasta to the skillet with pancetta.
Pour egg mixture over pasta, stirring quickly to coat the pasta and create a creamy sauce. Add pasta water as needed to reach desired consistency.
Serve immediately with extra grated cheese and black pepper on top.
