Blueberry Yoghurt Muffins

1 1/2 cups S/R flour
1/4 cup sugar
200gr plain yoghurt
2 tablespoons oil
1 egg
1 cup blueberries - fresh or frozen

In a large bowl, mix the flour and sugar together.
In a separate bowl, add the yoghurt, oil, egg and mix well.
When mixed, add in the blueberries and mix carefully.
Add this wet mixture to the flour and sugar mixture, and stir until combined.
(This is a dense mixture)

Use 1/4 cup per muffin - makes 12
Oven 180 degrees FF or 200 degrees for 20 -25 minutes.

* I've also used vanilla yoghurt

If you find it's too dense, sometimes I add a splash of milk.

Good to bake muffins without nuts for school.
 
Sometimes the mixture can be a bit dense, so add a bit of milk.
That's if I use greek yoghurt which is a thicker consistency compared to other yoghurts.

These blueberry muffins look great , good base recipe , you can swap the fruit for any other fruit in season and add some seeds , nuts , coconut or different milk flavours. Thanks for sharing .

You can indeed. Instead of blueberries, I've grated 1 apple + 1 teaspoon vanilla with this base. Same amount of time in the oven as well.
