Blueberry Loaf cake

It's the 4 ingredient recipe, but I add blueberries.

1 cup self raising flour
1 cup desiccated coconut
1 cup milk
1/2 cup sugar
1 cup frozen or fresh blueberries

In a bowl, mix flour, coconut, milk and sugar. Lightly fold in blueberries.

Spoon into a lined loaf tin

Bake 160 degrees fan forced or 180 degrees for 1 hour, or until cooked.

Yes I mostly use frozen berries as they're cheaper. I have made it with sultanas many years ago. It was okay.
The original recipe is 1 cup of sugar, but I found it was too sweet.
I love the sound of this recipe and will make it today but I have been making everything either blueberries or banana's.

I made a carrot cake yesterday using walnuts due to my daughters insistence and 1 am this morning remember my 36 year old son loves carrot cake and he is allergic to walnuts so I jumped out of bed to put a sign on it

Whenever I bake with sultanas, raisins and cherries (even nuts) they always seem to end up at the bottom of the cake - what am I doing wrong ?

They often do. My take on it is they are heavy compared to other fruits so they sink. However, not with a thick mixture like a Christmas cake.

For the lady who enquired about her fruit sinking, toss the fruit lightly in flour and lightly fold through mix.
