Best Homemade Sauces cooking class 7

This one is for different homemade sauces that I make .

Mushroom Sauce

Ingredients

300g button mushrooms sliced thinly
2 garlic finely minced
1/2 tablespoon olive oil
30 g unsalted butter
1/4 cup white wine
125ml chicken stock
1 cup thickened cream
pinch of salt n pepper
1 teaspoon tyme
1/2 cup fresh grated Parmesan cheese

Method
1. Heat oil n butter in large frypan. Add the mushrooms , cook for 5 minutes until brown. Just before they are cooked add the garlic, salt n pepper and cook for 2 minutes.

2. Add the wine , stiring and scrapingthe sides and bottomfir 1 minut.

3. Add the stock , cream and parmesan cheese. Stir then lower the heat to medium so the sauce is simmering, do not boil as the cream will curdle.

4. Simmer gently for 2 to 3 minutes, stiring occasionally until it thickens. Stir in tyme , salt n pepper.
Remove from stove and serve immediately.
perfect on top of steak or sausages

Roast Capsicum Sauce

Roasted Red Pepper Sauce! Top it on eggs, potatoes, sandwiches, pizzas, burgers, salads, bowls, and beyond. YUM.
Ingredients

4 large red capsicums
1/2 cup olive oil
1/2 cup almonds
1 clove garlic
1/2 teaspoon coarse salt (more to taste)
juice of one lemon
a small bunch of parsley ( optional)

Method.
Preheat oven 200 C or 180 C fan-forced

1. Place capsicum whole on a baking dish and spray lightly with olive oil spray. Place in oven for about 20 min or until capsicum is soft and starting to brown in places.
Prepare a bowl filled with cold water and ice cubes.
As soon as capsicum is out of the oven Place in bowl of ice n water.
Peel capsicum with fingers and remove seed.

2. place all ingredientsin a blender including the riasted capsicum and blend until smooth.
put into a bowl or jug until ready to use.



Sweet n Sour Sauce


This is a great dipping sauce for spring rolls, chicken chips or tenders ect

Ingredients
2 teaspoon cornflour
2 tablespoon water
1/2 cup apple cider vinegar
1/3 cup brown sugar tightly packed
2 tablespoon tomato sauce
2 teaspoon light soya sauce

Method
1. Place all Ingredients in a small saucepan and cook over medium heat, bring to a simmer, stirring regularly, then cook until thickens to a syrupy consistency, 3 to 5 min
Can Be Refrigerated for up to 5 days, freezer 3 months

I will add more sauces tonight . White sauce , red wine sauce plus more
