Best Banana Muffins

This is another banana recipe I want to share.

These muffins are so delicious and easy to make.
Prep time 15 min
Cook time 20 min
Makes 12

Ingredients

5 medium ripe banana's
1 teaspoon baking powder
1 teaspoon bi carb soda
1 Egg
1 1/2 cups plain flour
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 cup caster sugar or white sugar
1/4 cup brown sugar lightly packed
1 teaspoon vanilla extract or essence
1/4 cup chopped walnuts optional
1/3 cup butter or margarine melted
Pinch of salt

Method

1. Preheat oven 175 °C or 155 °C fan-forced
Place muffin cases in a muffin pan

2. Sift flour, baking powder, bi carb soda, cinnamon, nutmeg n salt together in a bowl.

3. Mash banana's in a large bowl. Mix in melted butter , egg, brown and white sugar and vanilla extract. Fold in flour mixture until combined. Fold walnuts into batter

4. Divide mixture evenly among muffin cases

5 . Bake in preheated oven for around 20 minutes or until a toothpick inserted comes out clean.

These are the best Banana muffins

I thought I had alot of banana's a few months ago but it's nothing to what we have now.
And the lemon trees are full so in the next couple of months it will be lemons galore
Suzanne, I mash my bananas add a little lemon juice and freeze in clip lock bags. I can then use for muffins, banana bread and banana scones.
 
I like muffins especially when they have fruit in them .
I would leave out the sugar as the bananas are loaded with natural sweetness and change the butter to light natural yoghurt .
If it still needs some sweetness , I will add a small amount of coconut sugar , sometimes a little on top , which gives a nice crunch .

Up to maybe 6 months ago I never knew you could freeze them. I freeze containers full of banana's with baking paper in between the layers and the kids use them for banana smoothies.
