Bean Casserole

I will make this as a side or we will have it served on rice as a main.
This is a dish that you can add any vegetables you want and even meat but is very delicious as is.



NOTE
1. If you are using meat in this recipe I use chuck steak cut into small pieces and added after the onion and garlic saute at step 1. Brown the meat before adding potatoes and then continue onto step 2
2. You can add other vegetables eg carrots, zucchini. Just add when you add the beans.

Ingredients
- 1/4 cup Olive oil
- 1 Large onion diced
- 4 Garlic cloves minced
- 1 Small red chilli diced (optional)
- 2 tablespoon Tomato paste
- 1 Fresh parsley bunch (small) chopped
- 6 meduim potatoes peeled and cut into small chunks
- 400 grams Crushed tomatoes
- 1 tablespoon Salt
- ½ teaspoon Black pepper
- 500 ml Vegetable stock
- 500 grams Green string beans tips and tails trimmed
Instructions
- 1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, then sauté for 2 minutes until fragrant.


- 2. Stir in the tomato paste, red chilli, and parsley, mixing well.
- 3. Add the potatoes, salt, pepper, and crushed tomatoes, stirring to coat everything evenly.
- 4. Pour in the vegetable stock, bring to a boil, then reduce the heat to low-medium. Cover and simmer for 30 minutes.
- 5. Stir in the green beans, cover again, and continue cooking for another 30 minutes.
- 6. Remove the lid and cook uncovered for a further 10 minutes until the liquid has slightly reduced.
- 7. Turn off the heat and let the dish rest for a few minutes before serving.
