Banana Pancakes

1 banana
1 egg
120ml milk
110gr plain flour
1 teaspoon baking powder

Mash the banana until there are no lumps, then scoop it into a bowl.
Add the egg and milk. Mix well.
Then add the plain flour and baking powder gradually.
Stir until it forms a thick mixture.

The amount of pancakes the mixture makes, depends on what size you want. I make smaller sized pancakes, which turn out with a rustic appearance like my pic.

I often make a berry compote from frozen berries. They go well with pancakes. Cook frozen berries with a bit of vanilla extract in a saucepan - keep stirring until they become juicy and soft.

I'm going to try this for my grandson who loves pancakes and banana's.
But I'm going to use oat milk due to his allergies
Oat milk will be good flavour with the banana for him. These pancakes are quite filling, so he'll feel nice and full after eating them.
