I want to bring you all back to 50 years and more ago in The Australia I grew up in and share a load of recipes that I remember as a child and that I have also cooked as an adult.
Recipe is best made just before serving

Ingredients
Banana fritters
- 1/2 cup self-raising flour
- 1/2 cup plain flour
- eggs lightly beaten
- 1/2 cup milk
- 1 teaspoon oil
- 1 teaspoon vanilla essence
- 1 tablespoon caster sugar
- 4 large bananas cut in half
- oil for deep-frying
- Plain flour to coat banana's before dipping in batter around 1/4 cup

Sift flours and caster sugar into bowl, gradually whisk in eggs,milk,oil and essence - 2
Peel bananas, cut into two, Roll lightly in flour. - 3
Drop banana pieces into batter, drain off excess batter. Deep fry in hot oil until golden brown. Remove, drain on absorbent paper. Serve hot with ice-cream. - Note you can roll hot cooked banana in sugar , I do
