Banana and Blueberry Chocolate Pudding dessert

150gr banana, cut into chunks
100gr fresh blueberries
1/4 cup sugar
50gr plain flour
2 heaped teaspoons cocoa powder
1 teaspoon baking powder
1 teaspoon vanilla extract
50ml oil
50ml milk

I use either a square cake tin or a 23cm round cake tin. Line it with baking paper.

Scatter the banana chunks and blueberries evenly over the base of the tin.
In a bowl, add the sugar, flour, cocoa powder and baking powder and mix together.
Add the vanilla, oil and milk and mix again.
If the batter is too thick, add a small amount of milk until it's a smooth, pourable consistency.
Pour evenly over the banana and blueberries.

Oven 180 degrees fan forced or 200 degrees. Bake for 15 to 20 minutes.
It's ready when a knife inserted in the centre comes out clean.

Nice on it's own, or if you like icecream or cream.

* You could use any combination of fruits. eg. pears, raspberries, or dried fruits.

Yes extra virgin is overpowering - I use the mild or light taste for that reason. There are several brands who make the light taste in Oz - I will not buy olive oil that is not Australian.
I agree. I have used extra virgin with this recipe ... too overpowering. Our Australian olive oil has a high smoke point as well.
