Baked Tomato Fish and Marinated Broccoli

This is another meal I make for hubby . I look for quick healthy meals that are diabetic friendly.

Yes I do make a different meal for the other family members.

Nutrition Facts​

1 serving: 121 calories, 4g fat (1g saturated fat), 24mg cholesterol, 256mg sodium, 4g carbohydrate (2g sugars, 1g fiber), 18g protein.

Ingredients Roasted fish n tomatoes​

  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 2 pieces of boneless fish eg snapper, cod , whiting or any boneless skinless fillets of choice
  • 1/4 teaspoon dried basil, divided
  • 1/8 teaspoon salt, divided
  • 1/8 teaspoon pepper, divided
  • 2 red tomatoes, thinly sliced almost like cooking tomatoes 🍅
  • 2 teaspoons grated Parmesan cheese

Directions​

  1. Preheat oven to 200 C 180 fan forced. In a shallow bowl, combine lemon juice and oil. Add fish fillets; turn to coat. Place in a greased 9-in. pie plate. Sprinkle with half each of the basil, salt and pepper. Arrange tomatoes over top; sprinkle with cheese and remaining seasonings.
  2. Cover and bake until fish flakes easily with a fork, 10-12 minutes.
Serve with Brocoli below, salad or steamed vegetables


Marinated Broccoli​


Prep time 10 minutes + refrigeration

The Brocoli, I marinate for at least an hour in the fridge

Ingredients​

  • 4 teaspoons olive oil
  • 1 tablespoon water
  • 1 tablespoon white wine vinegar
  • 1-1/2 teaspoons lemon juice
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • Dash cayenne pepper
  • 2 cups fresh broccoli florets no stems
  • 1 small chopped red capsicum

Directions​

  1. In a jar with a tight-fitting lid, combine the first 8 ingredients; shake well. In a small bowl, combine broccoli and red capsicum; add dressing and toss to coat. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon.
Marinating it softens it so no need to cook. You can however lightly steam. Then run under cold water then add to marinate
