Baked Potatoes with Cream Cheese

My favourite vegetable has to be the humble potato.
It's amazing how there are so many ways to serve them.

One of my favourites has to be this one.

INGREDIENTS
  • 4 large potatoes
  • 1 x tbsp.oil
  • 250g cream cheese tubs or spreads or light cream cheese spread or tubs
  • 2 cloves garlic , crushed
  • 2 tbsps.finely chopped chives
  • 4 rashers bacon , chopped and fried, to garnish ( optional)
  • Extra chives , for garnish
METHOD
  1. Brush the potatoes lightly with oil and bake at 200 °C for 45 minutes to 1 hour, or until cooked through.
  2. Combine cream cheese with the garlic and herbs. Cut a deep cross diagonally through each of the potatoes and spoon over the flavoured cream cheese and top with additional chives and bacon. Serve immediately.
    Serve on their own or with a side salad

Could never understand the hype surrounding sweet potato. I've only had it once and found it to be more sour than sweet.
I buy a bag of sweet potato; I try to get smaller ones. I wash and dry them and slice them almost through all the way along (like saddle back potato). rub them with a mixture of olive oil and minced garlic and sprinkle with mixed herbs. (Be generous) Arrange on a baking tray and bake till golden and starting to crisp on top.
I allow them to cool (the ones I don't eat) and wrap separately in cling wrap and freeze until I want one with another meal. Defrost in the fridge and reheat in the microwave. I hope you try this it may change your mind. 🍠🍠🍠🍠🍠🍠:)
