Baked Pasta

I cooked this for my grand kids a couple of weeks ago and they asked for more , so was a huge hit . Serve it on its own or with a tossed garden salad

Ingredients​

  • 1 packet of spaghetti or pasta of choice
  • 800 g beef mince
  • 1 medium onion, chopped
  • 1 jar pasta sauce
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/3 cup grated Parmesan cheese
  • 5 tablespoons butter, melted
  • 2 cups cottage cheese
  • 4 cups shredded mozzarella cheese
  • Chopped fresh basil, optional


Directions​

  1. Preheat oven to 170°C or 150°C fan forced. Cook spaghetti according to package directions
  2. . Meanwhile, in a large skillet, cook beef and onion over medium heat for 6-8 minutes or onion is tender and beef is no longer pink, breaking meat into crumbles; drain. Stir in pasta sauce and seasoned salt; set aside.
  3. In a large bowl, whisk the eggs, Parmesan cheese and butter.
  4. Drain spaghetti; add to the egg mixture and toss to coat.
  5. Place half the mixture in a greased 13x9-in. baking dish. Top with half of the cottage cheese, meat sauce and mozzarella cheese. Repeat layers.
  6. Cover and bake for 35 minutes. Uncover and bake for 20 minutes longer or until heated through. Let stand for 15 minutes before serving. If desired, sprinkle with basil. Serve with tossed salad and crusty bread

Looks delicious and not surprised it was a huge hit. But I think you could cook anything and it would be a huge hit for your lucky grandkiddies! 👍🏻😀
One of my granddaughter's ask her mum every night if they can come to eat at ours. My daughter called in today after work and I sent home a plate if rice, souvlaki and potatoes. She will be happy but upset her mum called in without her
 
How I wish my grandies could just drop in.
About 18 months ago my son and family moved interstate, from WA to NSW and I miss them terribly.
I am heading across in 5 weeks time and counting down the days.
Now I know how my mother felt when I left Victoria and moved to WA. Karma perhaps.
It is hard when they move away . You will really enjoy them with each visit
Where in NSW are they.

They have bought a 122 acre property in Dilkoon, some 15 minutes from Grafton. My son always wanted an off the grid property and live a self sufficient life style.
He has always worked in jobs managing boat yards and marinas, and is still doing that in Coffs Harbour so quite a hike to work every
day, but he loves his job.
Now with the property as well he is going to be a very busy man.

The pasta dish looks really nice and easy to make . Also good to have a few spare meals as there are only the 2 of us . Especially in this terrible non-stopping rainy weather with road closures and cleaning up yards .
As long as we don’t get another power loss . It was one of the reasons I’m cooking on gas .
