Baked Fish Parcels

My family love fish parcels and I have been making them for years

Recipe is from taste of home with a few changes including type of fish

Ingredients​

  • 12 cups fresh baby spinach
  • 1 tablespoon butter
  • 1 tablespoon extra virgin olive oil, divided
  • 4 boneless fish fillets I use barramundi or whiting
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 large purple or red onion, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • Lemon wedges


Directions​

  1. Preheat oven to 180°C or 160 °C fan forced.
  2. In a large skillet, cook spinach in butter and 1 teaspoon oil over medium-high heat until wilted, 5-7 minutes.
  3. Divide spinach among four 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil. Place fish on top of spinach; sprinkle with salt and pepper. Top with onion, lemon juice, garlic and remaining 2 teaspoons olive oil. Fold foil around mixture, sealing tightly.
  4. Place packets on a baking pan / tray in oven. Cook until fish just begins to flake easily with a fork, 12-15 minutes. Open packets carefully to allow steam to escape. Serve with lemon wedges if desired.
Goes well with hot chips or jacket potatoes and tossed salad

I have a few really good fish recipes including a beer batter one also a soda batter one. I will message it to you tonight as I'm nolonger posting recipes
A shame you are no longer posting recipes, al though I didn't show it I always enjoyed reading them and occasionally cooking one for she who must be obeyed.

Ice cold soda batter is the best as it gives a nice fluffy but crunchy texture. I make my own potato scallops, battered fish cocktails and honey king prawns using it.

The soda batter is the best I also use it and make fish cocktails. Soda water I always have in the fridge.

You should be posting and sharing your favourite recipes .

I'd like that, I have old ones myself one that came out in early sixties touted as a million recipes. Unfortunately I wouldn't have clue how to digitise it as each page is cut into three with separate meals on each strip, although I used to prefer book I always the chef dizzy queen? which just lists ingredients the rest is up to you.

Thanks for this recipe. Personally not a fan of fish, however my hubby is. Hope other people can start posting their recipes. Surely some have nice recipes to share.
I think we have alot in common. I hate fish but hubby could eat it every day.
I make him alot of fish due to my sons love of fishing and the huge ammount he catches.

Hopefully people will start posting their favourite recipes that they cook.

The only fish I eat is John West salmon with lemon and pepper, and it's a not a regular thing.
I really hope that people do start posting their recipes. It will become lean otherwise.

The only fish I eat is John West Tuna on top of tossed salad and every now and then John West salmon with finely chopped onion in it as a sandwich filler . Something from my childhood. My family thinks it's terrible
