Baked Chicken healthier KFC version

This may not be KFC but just as good , in my eyes it's better !!
Serves 4.

Ingredients​

  • 3/4 cup Buffalo wing sauce, divided ( see notes)
  • 2 chicken breast fillets cut in half horizontal
  • 3/4 cup plain flour
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon dried basil leaves
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon celery salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried mustard
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 1-1/4 cups panko bread crumbs

Directions​

  1. Pour 1/3 cup wing sauce into a shallow dish. Add chicken and turn to coat. Let stand 15 minutes or refrigerate, covered, up to 24 hours.
  2. Preheat oven to 200 C 180 C fan-forced. Drain chicken, discarding marinade. In a shallow bowl, mix flour, herbs n spices and pepper. Place bread crumbs and remaining wing sauce in separate shallow bowls. Dip chicken in flour mixture to coat all sides; shake off excess. Dip in wing sauce, then in bread crumbs, patting to help coating adhere.
  3. Place chicken on a rack in a 15x10x1-in. baking pan. Bake 25-30 minutes or until chicken is cooked inside .
Notes

1. Buffalo sauce is available in Coles and woolworths. For this recipe I use just the cheapest one its around $2.40. It's not worth making your own

2. You can use different chicken pieces including with bone in but add 10 minutes to cooking time

I like using crushed cornflake crumbs I crush my own not crummies in the box they are useless.😁
