Arnott’s Double Coat Tim Tam Mousse
Ingredients:

1. Put the chopped chocolate and butter in a microwave-safe bowl. Heat in the microwave on medium for 1-2 minutes, stirring every 30 seconds until melted and smooth. Let it cool for 2 minutes. Add the egg yolks and mix well.
2. In a separate bowl, use an electric mixer to beat the cream until soft peaks form.
3. In another bowl, beat the egg whites until soft peaks form. Then, gently fold the whipped cream into the chocolate mixture. Add 2 tablespoons of the egg whites and mix well. Gradually fold in the remaining egg whites.
4. Finely chop 6 Tim Tam biscuits and gently fold them into the mousse mixture. Spoon the mousse into serving glasses. Refrigerate for at least 3 hours or until firm.
5. Before serving, chop the remaining Tim Tam biscuits and sprinkle them on top of the mousse. Add a few blueberries and a dollop of whipped cream on top. Enjoy!
